Peiking Duck Dinner
This optional tour was billed as a "classic dish using time-honored techniques." The duck was prepared using a special oven and wood. It was then cut up in a special way by the chef , which included making over 100 cuts of meat on each duck. It was the only tour during our two week stay in China that our group thought was less than great. By comparison, the duck that we were served while on the river boat portion of our trip was excellent!
