This optional tour was billed as a "classic dish using time-honored techniques" which included preparation using a special oven and wood. It was then presented to us by the chef, which included making over 100 cuts of meat on each duck prior to it being served. Applause for the chef was then expected from the diners. IMHO, it was the only tour during our two week stay in China that our group thought was less than great. By comparison, the duck that we were served while on the river boat portion of our trip was excellent!
